At The Butcher Shop, the house-made charcuterie and market-driven daily menu call for the wines of the old world: the wines of Italy, France and Spain. To echo the quality and integrity of the food, Wine Director Cat Silirie selects wines from artisanal producers, often from families that farm the grapes and make the wine in small batches.
The Wine Program Cat has created is accomplished by extensive travel and research and by the education of staff during weekly “Wine Words.” Each year, Cat travels to different wine-growing regions, meeting the winegrowers, and sampling the regional cuisine. These travels lend an authenticity and pedigree to the wine selections and relaying these experiences to our staff during Wine Words is something about which Cat feels extremely passionate. Wine Words is a defining part of The Butcher Shop staff culture and attracts servers and bartenders who love wine and want to learn through Cat’s storytelling, teaching, tasting, testing and training.
The wine list features over 100 wines, many of which are available by the glass, as well as nightly specials. Written on the slate wall, these additions to the wine list are always seasonal, artisanal, and food friendly, offering a taste of both Cat’s most recent discoveries and treasured favorites.
